Best Selling Sake Brewery in Yamanashi with 300 Years of History

Founded in 1750 by first generation Ibei Kitahara, who separated from Shinshu Takatoo Kitahara family, who had been engaged in sake brewing for many generations. Ibei Kitahara fell in love with the water quality of Hakushu, and began sake brewing in Daigahara-shuku, a post station on Koshu Kaido. The current representative Hyogo Kitahara is the 12th generation. Currently Shichiken is the sake brewery with the largest market share in Yamanashi prefecture. Since 2014 Managing Director Ryogo Kitahara had been appointed sake brew master aims to produce sake that embodies the premium quliaty of Hakushu water.

Taking on New Challenges with Traditional Foundation

Even though Shichiken implements new brewing technologies, however our brewery staffs are still passionate about the manual procedures involved in the sake making process. We wish to challenge various possibilities of sake based on the technologies cultivated in sake making, without changing the essence of traditional sake making. And the foundation for this is our root Hakushu. We are committed to carefully making sake that embodies the Yamashi rice, which is nurtured with local water, oxygen, and nature.
